Zucchini Herb Casserole from Robyn

Ingredients

  • 1/3 c. uncooked rice
  • 2/3 c. water
  • 2 Tbs. Vegetable oil
  • 1 ½ lb. Zucchini
  • 1 c. green onion
  • 1 clove garlic
  • 1 ¼ tsp. Garlic salt
  • ½ tsp. Basil
  • ½ tsp. Paprika
  • ½ tsp. Oregano
  • 1 ½ c. tomato
  • 2 c. cheddar cheese

Instructions

  1. Cook rice. Cook garlic, zucchini and onions 5 minutes. Add seasonings. Mix in rice, tomato, and 1 c. cheese. Stir and cook until heated through.
  2. Transfer to greased 1 ½ qt. casserole dish. Top with remaining cheese.
  3. Bake uncovered at 350º for 20 minutes. Serve.
