Ingredients
- 1/3 c. uncooked rice
- 2/3 c. water
- 2 Tbs. Vegetable oil
- 1 ½ lb. Zucchini
- 1 c. green onion
- 1 clove garlic
- 1 ¼ tsp. Garlic salt
- ½ tsp. Basil
- ½ tsp. Paprika
- ½ tsp. Oregano
- 1 ½ c. tomato
- 2 c. cheddar cheese
Instructions
- Cook rice. Cook garlic, zucchini and onions 5 minutes. Add seasonings. Mix in rice, tomato, and 1 c. cheese. Stir and cook until heated through.
- Transfer to greased 1 ½ qt. casserole dish. Top with remaining cheese.
- Bake uncovered at 350º for 20 minutes. Serve.
