Vegetable Stuffing

Ingredients

  • 2 c chopped onions
  • 1½ c thinly sliced celery
  • 1 c diced tart apple, peeled & cored
  • ¼ c butter
  • 1 Tbs ground sage
  • 1 tsp ground marjoram
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp savory
  • ½ tsp thyme
  • 12 c lightly toasted bread, cubes
  • ¼ c fresh parsley, chopped
  • 1½ c vegetable stock

Instructions

  1. In large frying pan sauté onions, celery, apple in butter until onion is translucent
  2. Stir in sage, marjoram, S&P, savory, thyme
  3. Combine mixture with bread cubes & parsley
  4. Toss well
  5. Pour stock over mixture, tossing well
  6. Spoon into crock pot
  7. Cover & cook on high for 1 hour
  8. Reduce to low & continue cooking for 2-3 hours, stirring every hour
