Spinach Enchiladas

Ingredients

  • 1 Tbs. butter
  • ½ c. green onions
  • 2 cloves garlic
  • 1 10 oz. package spinach, thawed and squeezed dry
  • 1 c. ricotta cheese
  • ½. c. sour cream
  • 2 c. monterey jack
  • 10 tortillas
  • 1 can enchilada sauce (or homemade sauce!)

Instructions

  1. melt butter over med. Heat. Add garlic & onion. Cook until fragrant.
  2. Add spinach. Cook 5 min. and remove from heat.
  3. Add ricotta, sour cream, & 1 c. monterey jack.
  4. Warm tortillas. Add filling and assemble. Place in baking sheet and cover with enchilada sauce.
  5. Bake 15-20 min. at 375 until slightly brown. Voila!
