Ingredients
- 1 Tbs. butter
- ½ c. green onions
- 2 cloves garlic
- 1 10 oz. package spinach, thawed and squeezed dry
- 1 c. ricotta cheese
- ½. c. sour cream
- 2 c. monterey jack
- 10 tortillas
- 1 can enchilada sauce (or homemade sauce!)
Instructions
- melt butter over med. Heat. Add garlic & onion. Cook until fragrant.
- Add spinach. Cook 5 min. and remove from heat.
- Add ricotta, sour cream, & 1 c. monterey jack.
- Warm tortillas. Add filling and assemble. Place in baking sheet and cover with enchilada sauce.
- Bake 15-20 min. at 375 until slightly brown. Voila!
