Ingredients
- BEANBALLS:
- 1 can kidney beans
- 2 Tbs soy sauce
- 2 Tbs tomato paste
- 2 Tbs olive oil
- 2 cloves garlic
- 1/4 tsp lemon zest
- 1/2 c bread crumbs
- 1/4 c wheat gluten
- 1/2 tsp oregano
- 1/4 tsp thyme
- 2 cans tomatoes, garlic, spaghetti, veggies for roasting
Instructions
- VEGGIES:
- Slice peppers, mushrooms
- Put veggies & tomatoes on baking sheet, cover with oil, S&P.
- roast for 30 min or so
- preheat oven to 375
- mash beans
- add all ingredients, blend together with hands
- roll into balls
- grease pan, drizzle balls with olive oil
- back 15 min, flip, bake 10 min
- fry garlic in lots of olive oil
- add 2 cans tomatoes
- cook 20 minutes or so
- add spices
- Cook spaghetti when sauce is halfway cooked
