Spaghetti & Beanballs

Ingredients

    BEANBALLS:
  • 1 can kidney beans
  • 2 Tbs soy sauce
  • 2 Tbs tomato paste
  • 2 Tbs olive oil
  • 2 cloves garlic
  • 1/4 tsp lemon zest
  • 1/2 c bread crumbs
  • 1/4 c wheat gluten
  • 1/2 tsp oregano
  • 1/4 tsp thyme


  • 2 cans tomatoes, garlic, spaghetti, veggies for roasting

Instructions

    VEGGIES:
  1. Slice peppers, mushrooms
  2. Put veggies & tomatoes on baking sheet, cover with oil, S&P.
  3. roast for 30 min or so

  4. BEANBALLS:
  5. preheat oven to 375
  6. mash beans
  7. add all ingredients, blend together with hands
  8. roll into balls
  9. grease pan, drizzle balls with olive oil
  10. back 15 min, flip, bake 10 min

  11. SAUCE:
  12. fry garlic in lots of olive oil
  13. add 2 cans tomatoes
  14. cook 20 minutes or so
  15. add spices

  16. SPAGHETTI:
  17. Cook spaghetti when sauce is halfway cooked
