Ravioli dough by hand

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp sea salt
  • 4 eggs
  • 3 tbsp extra virgin olive oil
  • 2 tbsp water

Instructions

  1. make well in flour. Add oil, water, and salt. Add eggs. Stir around yolks slowly incorporating flour into dough. Use enough flour so dough is sticky but doesnt stick to counter.
  2. Put into bag and let sit at room temperature for 1 hour.
  3. To form ravioli, roll dough out thinly. Add filling, and put another layer of dough on top. Use a coffee cup to cut out raviolis. Pinch with fingers to seal and give a rustic look.
  4. Cook in boiling water. Take out as soon as it rises to the top.
