Ingredients
- 3 c. vegetable stock
- 3 c. diced potatoes
- ¼ tsp. Minced garlic
- ¾ c. chopped green onion
- 1 ½ c. heavy whipping cream
- 3 Tbs. Cornstarch
- 4 Tbs. Cold water
- 1 c. pepperjack cheese
Instructions
- Bring broth to a boil. Add potato. Lower heat to simmer. Add garlic and cook 30 min. Add green onion & heavy cream and cook 10-15 min.
- In small bowl, mix cornstarch and water. Slowly pour slurry into soup & bring to boil. When at desired consistency, add cheese. Voila!
