Potato Pepperjack Soup from Samantha

Ingredients

  • 3 c. vegetable stock
  • 3 c. diced potatoes
  • ¼ tsp. Minced garlic
  • ¾ c. chopped green onion
  • 1 ½ c. heavy whipping cream
  • 3 Tbs. Cornstarch
  • 4 Tbs. Cold water
  • 1 c. pepperjack cheese

Instructions

  1. Bring broth to a boil. Add potato. Lower heat to simmer. Add garlic and cook 30 min. Add green onion & heavy cream and cook 10-15 min.
  2. In small bowl, mix cornstarch and water. Slowly pour slurry into soup & bring to boil. When at desired consistency, add cheese. Voila!
