Mexican Bake

Ingredients


  • 1 onion
  • bell peppers
  • 2 cloves garlic
  • mushrooms
  • 1 1/2 c. corn
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1/2 c. salsa
  • 1 can black beans
  • 2 large sweet potatoes (or regular potatoes), shredded
  • 1 1/2 cups mexican cheese
  • 1/2 cup mozzarella

  • serve with avocado and sour cream

Instructions


  1. fry onion, bell pepper, mushrooms. add 1 tsp cumin & 1 tsp chili powder. remove from pan and set aside
  2. in same pan, fry corn. add 1 tsp cumin & 1 tsp chili powder.
  3. add veggies, black beans, and salsa to corn

  4. grease backing dish. layer potatoes, veggies, cheese.

  5. cover with aluminum, bake 25 min @ 375. Remove from heat, add mozza cheese, bake 5 more minutes.
