Grilled/Fire Veggie Foil Packs

Ingredients

  • 1-2 tablespoons packed golden brown sugar
  • 2 tablespoons paprika
  • 1 1/2 tablespoons chili powder
  • 1 tablespoon ground black pepper
  • 2 1/4 teaspoons garlic powder
  • 1 1/2 teaspoons cayenne pepper
  • 1 1/2 teaspoons dried basil
  • 1-2 tablespoons salt

  • Assorted vegetables (such as zucchini, bell peppers, red onions and large mushrooms)
  • Olive oil

Instructions

  1. Chop veggies and wrap in foil pack. Drizzle a LITTLE olive oil and generously sprinkle seasoning over. Cook over fire 20 minutes-ish, open and cook more for a burnt flavor.

  2. Verbose:
  3. Combine first 8 ingredients in processor. Blend 15 seconds.
  4. Transfer to small jar; cover tightly. (Spice mixture can be prepared 2 weeks ahead. Store in refrigerator.)
  5. Prepare barbecue (medium-high heat) or preheat broiler.
  6. Cut all vegetables into 1/2-inch-thick slices.
  7. Brush with olive oil.
  8. Sprinkle generously with spice mixture.
  9. Grill until just cooked through, turning occasionally, about 8 minutes.
