Ingredients
- 1/4 C. white wine vinegar (really needs this kind of vinegar)
- 1 tablespoon sugar
- 2 cups grape tomatoes halved
- 1 cup corn kernels (about 2 ears, I usually use 3)
- 1/2 C. red onion slivered
- 2 tablespoons minced flat-parsley
- 1 tablespoon chives (I often skip this)
- 1 tablespoon thinly sliced basil
- salt and pepper to taste
Instructions
- Combine vinegar and sugar in a large bowl, whisking until sugar is dissolved.
- Add tomatoes, corn, onion and herbs, season with salt and pepper.
- Toss to coat.
- Cover and chill until ready to serve.
