Fresh Summer Salad from Debby

Ingredients

  • 1/4 C. white wine vinegar (really needs this kind of vinegar)
  • 1 tablespoon sugar
  • 2 cups grape tomatoes halved
  • 1 cup corn kernels (about 2 ears, I usually use 3)
  • 1/2 C. red onion slivered
  • 2 tablespoons minced flat-parsley
  • 1 tablespoon chives (I often skip this)
  • 1 tablespoon thinly sliced basil
  • salt and pepper to taste

Instructions

  1. Combine vinegar and sugar in a large bowl, whisking until sugar is dissolved.
  2. Add tomatoes, corn, onion and herbs, season with salt and pepper.
  3. Toss to coat.
  4. Cover and chill until ready to serve.
