Creamy Vegetable Fettuccini

Ingredients

  • 2 c carrots chopped in circles
  • 6 oz uncooked fettuccini
  • 2 c broccoli flourets
  • 6 Tbs butter
  • 2 Tbs flour
  • ½ tsp salt
  • ½ tsp nutmeg
  • 1 c milk
  • ¼ c grated parmesan

Instructions

  1. Boil 8 cups water
  2. Add carrots & fettuccini
  3. Cook over med heat for 6 min
  4. Add broccoli and continue cooking until everything tender (4-5 min)
  5. Drain and set aside
  6. ALFREDO:
  7. Melt butter
  8. Stir in flour, salt, nutmeg until smooth and bubbly (1 min)
  9. Add milk, cover and cook on med heat (4-6min) to get a full boil
  10. Boil 1 min
  11. Stir in fettuccini mixture
  12. Reduce heat to low, continue cooking (3-4 min)
  13. Sprinkle with parmesan & serve
