Ingredients
- 2 c carrots chopped in circles
- 6 oz uncooked fettuccini
- 2 c broccoli flourets
- 6 Tbs butter
- 2 Tbs flour
- ½ tsp salt
- ½ tsp nutmeg
- 1 c milk
- ¼ c grated parmesan
Instructions
- Boil 8 cups water
- Add carrots & fettuccini
- Cook over med heat for 6 min
- Add broccoli and continue cooking until everything tender (4-5 min)
- Drain and set aside ALFREDO:
- Melt butter
- Stir in flour, salt, nutmeg until smooth and bubbly (1 min)
- Add milk, cover and cook on med heat (4-6min) to get a full boil
- Boil 1 min
- Stir in fettuccini mixture
- Reduce heat to low, continue cooking (3-4 min)
- Sprinkle with parmesan & serve
