Chickpea Veggie Baked Nuggets

30 min at 400, flip at 15 min

Ingredients

  • 1 can chickpeas, mashed (or blended)
  • ½ c panko or breadcrumbs
  • 2 Tbs nutritional yeast
  • 1 onion, chopped
  • Shredded veggies, steamed
  • 2 cloves garlic, minced
  • 2 Tbs olive oil
  • 1 tsp paprika
  • 1 tsp oregano
  • S&P to taste
  • ---SRIRACHA YOGURT DIP:
  • 1 cup yogurt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Few squirts sriracha
  • Could try lime juice, S&P

Instructions

  1. Heat oven to 400
  2. Mix all ingredients together
  3. Shape into nuggets with hands
  4. Place on parchment lined baking sheet
  5. Bake 15 min, flip, bake another 15 min
  6. Airbake at the end for awhile to make crispy
