Carrot Cake from Debby

Ingredients

  • 2¼ c flour
  • 1½ c sugar
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1½ tsp cinnamon
  • ¾ tsp salt
  • 1 c vegetable oil
  • 3 eggs
  • 1½ c shredded carrots
  • ¾ c crushed pineapple w/ syrup
  • 1½ tsp vanilla
  • FROSTING:
  • 6 oz cream cheese (softened)
  • 1 Tbs butter (softened)
  • 1 tsp vanilla
  • 2 c powdered sugar

Instructions

  1. Sift together flour, sugar, baking powder, baking soda, cinnamon, salt
  2. Add vegetable oil, eggs, carrots, pineapple w/ syrup, vanilla
  3. Mix til moistened, beat 2 min med speed
  4. Bake in greased & lightly floured 13x9x2 pan 35 min at 350
  5. Cool
  6. FROSTING:
  7. Combine cream cheese, butter & vanilla in mixing bowl.
  8. Beat at low speed til light
  9. Gradually add sugar beating til fluffy
