Carrot Cake

Ingredients

  • 2¼ c flour
  • 1½ c sugar
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1½ tsp cinnamon
  • ¾ tsp salt
  • 1 c vegetable oil
  • 3 eggs
  • 1½ c shredded carrots
  • ¾ c crushed pineapple with syrup
  • 1½ tsp vanilla
  • Coconut (if desired)
  • FROSTING:
  • 6 oz cream cheese (softened)
  • 1 Tbs softened butter
  • 1 tsp vanilla
  • 2 c powdered sugar

Instructions

  1. Stir together flour, sugar, baking powder, baking soda, cinnamon, salt
  2. Add vegetable oil, eggs, carrots, pineapple, vanilla, coconut
  3. Mix until moistened, then beat 2 min at medium speed
  4. Bake in 9x13 pan, 35 min at 350
  5. FROSTING:
  6. Combine cream cheese, butter, vanilla
  7. Beat at low speed until light
  8. Gradually add powdered sugar, beating until fluffy
