Buffalo Tofu Bowl

Ingredients

  • Buffalo tofu from target
  • Brown rice
  • Pinto beans
  • 1 c. shredded carrots
  • 4 heaping cups kale
  • 1 tbs avocado oil
  • ΒΌ tsp. salt
  • 1 clove garlic minced

Instructions

  1. Cook rice
  2. Shred carrots, chop kale
  3. Heat oil over med, add kale & carrots. cook 1-2 min
  4. Add garlic & salt. cook 1-2 min
  5. Cook tofu
  6. Assemble bowl: rice, tofu, carrot/kale, pinto beans
