Buffalo Tofu Bowl

Ingredients

  • buffalo tofu from target
  • brown rice
  • pinto beans
  • 1 c. shredded carrots
  • 4 heaping cups kale
  • 1 tbs avocado oil
  • 1/4 tsp. salt
  • 1 clove garlic minced

Instructions

  1. cook rice
  2. shred carrots, chop kale
  3. heat oil over med, add kale & carrots. cook 1-2 min
  4. add garlic & salt. cook 1-2 min
  5. cook tofu

  6. assemble bowl: rice, tofu, carrot/kale, pinto beans
