Ingredients
- buffalo tofu from target
- brown rice
- pinto beans
- 1 c. shredded carrots
- 4 heaping cups kale
- 1 tbs avocado oil
- 1/4 tsp. salt
- 1 clove garlic minced
Instructions
- cook rice
- shred carrots, chop kale
- heat oil over med, add kale & carrots. cook 1-2 min
- add garlic & salt. cook 1-2 min
- cook tofu
- assemble bowl: rice, tofu, carrot/kale, pinto beans
