Bok Choy Boiled Greens Soup

Ingredients

  • 10-12 c water
  • 12 bok choy (whole)
  • 1 large daikon (halved, sliced)
  • 2 c bean sprouts
  • 9 mushrooms (cut into small pieces)
  • 1 block tofu (cubed)
  • 3 Tbs bouillon (i like "better than bouillon vegetable")
  • 3 Tbs miso
  • 3 Tbs chili oil

Instructions

  1. Boil maybe 12 cups water
  2. Add like 3 spoonfuls each stock base (bouillon, miso, chili oil)
  3. Add mushrooms, daikon. cook awhile to reduce and get umami in broth
  4. Add bok choy, cook until almost done. i like to keep them whole
  5. Add tofu, cook a few minutes or not at all
  6. Add bean sprouts
