Bibimbop with veggies, tofu, boiled egg

Ingredients

  • ½ c cooked wild rice
  • 1 boiled egg (whites only)
  • ½ c fresh tofu (cubed)
  • 2 tbs shredded sauteed broccoli
  • ½ c shredded sauteed carrots
  • ½ c sauteed ah choy
  • ¼ c vegan kimchi
  • ¼ c sauteed bean sprouts
  • 3 cloves garlic
  • 1 tsp salt
  • 3 tsp black pepper
  • 1 tbs sesame seeds
  • 2 tbs gochujang

Instructions

  1. Cook rice
  2. Chop tofu
  3. Shred and sauté broccoli, carrots with garlic, S&P
  4. Destem and sauté ah choy and bean sprouts with garlic, S&P
  5. Sauté tofu if desired
  6. Add rice, egg, tofu, veggies, kimchi to bowl. top with sesame seeds and gochujang
