Balsamic Glazed Veggies w Quinoa and tofu

Ingredients

    VEGGIES:
  • 1 can chickpeas
  • 1-2 bunches carrots
  • 1-2 bunches green onions, cut lengthwise
  • 1 bunch asparagus, cut in half
  • brussel sprouts
  • olive oil
  • salt
  • ½ c parmesan

  • TOFU:
  • 1 block Tofu

  • SAUCE:
  • 2 Tbsp balsamic
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • ½ tsp pepper
  • salt

  • GARNISH:
  • fresh thyme

Instructions

  1. make quinoa

  2. wash and cut veggies
  3. add veggies and chickpeas to baking sheet, cover in oil
  4. bake at 400 for 30+ min
  5. sprinkle parmesan on top, bake until melty (5-10 min)

  6. cube tofu, press out water
  7. bake in oil over medium until crispy

  8. whisk sauce ingredients together
  9. pour over cooked veggies
  10. sprinkle thyme on top
