Balsamic Glazed Veggies w Quinoa and tofu

Ingredients

    VEGGIES:
  • 1 can chickpeas
  • 1-2 bunches carrots
  • 1-2 bunches green onions, cut lengthwise
  • 1 bunch asparagus, cut in half
  • Brussel sprouts
  • Olive oil
  • Salt
  • ½ c parmesan
  • TOFU:
  • 1 block Tofu
  • SAUCE:
  • 2 Tbsp balsamic
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • ½ tsp pepper
  • Salt
  • GARNISH:
  • Fresh thyme

Instructions

  1. Make quinoa
  2. Wash and cut veggies
  3. Add veggies and chickpeas to baking sheet, cover in oil
  4. Bake at 400 for 30+ min
  5. Sprinkle parmesan on top, bake until melty (5-10 min)
  6. Cube tofu, press out water
  7. Bake in oil over medium until crispy
  8. Whisk sauce ingredients together
  9. Pour over cooked veggies
  10. Sprinkle thyme on top
