Baba Ganoush

Ingredients

  • 1 large head roasted garlic (see below)
  • 3 large eggplants
  • 1 med. red onion, chopped
  • ½ c. parsley
  • 1 Tbs. basil
  • 2 Tbs. olive oil
  • ¼ tsp. Tabasco
  • salt & pepper to taste

  • ROASTED GARLIC:
  • 1 head garlic
  • 1 tsp. Butter
  • fresh rosemary or oregano

Instructions

  1. grill eggplant evenly until charred.
  2. Peel off skin and put insides into bowl
  3. add remaining ingredients. Serve with naan.

  4. ROASTED GARLIC:
  5. peel off outer skin layer leaving head intact.
  6. Double wrap with foil. Top with 1 tsp. butter and fresh herbs.
  7. Fold up, seal, bake 60 min. at 375.
  8. squeeze cloves out, discard skins.
