Ingredients
- 1 large head roasted garlic (see below)
- 3 large eggplants
- 1 med. red onion, chopped
- ½ c. parsley
- 1 Tbs. basil
- 2 Tbs. olive oil
- ¼ tsp. Tabasco
- salt & pepper to taste
- 1 head garlic
- 1 tsp. Butter
- fresh rosemary or oregano
ROASTED GARLIC:
Instructions
- grill eggplant evenly until charred.
- Peel off skin and put insides into bowl
- add remaining ingredients. Serve with naan.
- peel off outer skin layer leaving head intact.
- Double wrap with foil. Top with 1 tsp. butter and fresh herbs.
- Fold up, seal, bake 60 min. at 375.
- squeeze cloves out, discard skins.
