Thai Roasted Vegetable Green Curry

This was really delicious! I liked the flavor, it was very filling, and it felt like nutritious with the veggies, chickpeas, and brown rice. Could definitely taste the salt but in a good way.

Like every meal so far, the portion size is 2-3 bites too big, which is perfect in my opinion. If I didn’t have a little extra I think my brain might feel the portion was too small then. This was the perfect amount being very hungry after not eating all day.

Why not 10/10?
Rice was like all microwaved rices, which I guess I’m just not used to the texture yet. The curry was delicious and rice has a good flavor, just that kind of less than fluffy texture compared to when you make a batch at home.
