Vegan Full English Breakfast

Ingredients

    TOFU SCRAMBLE
  • 1 pack of 400 grams Silken tofu
  • Half of an Onion
  • 2 Garlic cloves
  • 1 teaspoon of Turmeric
  • 1 teaspoon of Black salt (kala namak)
  • Freshly cracked pepper
  • MUSHROOMS
  • 100 grams of Mushrooms
  • Half of an Onion
  • 2 Garlic cloves
  • 2 handfuls of Spinach
  • OTHER
  • 250 grams Cherry tomatoes
  • 4 Potato item of your choice (like hash browns)
  • 1 tin (400 grams) Beans in tomato sauce
  • 2 Vegan sausages
  • 2 slices of Bread
  • Butter, olive oil, S&P

Instructions

  1. Heat oven to 375
  2. Drain tofu
  3. Chop 1 onion
  4. Slice mushrooms
  5. Line backing tray with parchment, add tomatoes. drizzle with oil, S&P
  6. Peel & shred potatoes. Cook hashbrowns. keep warm in oven.
  7. Saute ½ onion + 2 cloves garlic until transluscent
  8. Add mushrooms, cook until browned
  9. Add spinach, S&P. saute until spinach is soft. keep warm in oven.
  10. Saute ½ onion, 2 cloves garlic until transluscent
  11. Add turmeric
  12. Add tofu, scramble around
  13. Add S&P
  14. Make toast & heat beans. serve.
