Chipotle Taco Cheese Sauce

Ingredients


  • 2 large potatoes peeled and chopped (550g)
  • 1 large carrot peeled and chopped ( 115g)
  • 2 cloves garlic
  • 3 tbsp taco sauce
  • 3 tbsp nutritional yeast (I used bragg )
  • 1 tsp chipotle seasoning
  • 1/2 tsp onion powder
  • Sea salt to taste
  • Juice from 1/2 small lemon

Instructions


  1. Steam or boil until veg is tender, reserve water.
  2. Spoon the veggies into a blender.
  3. Using the water you boiled the veggies in, cover the potatoes and carrots halfway in the blender.
  4. Add in all the additional ingredients and purée until creamy.

  5. Add in a couple more splashes of water and scrape the sides of blender as needed . This keeps for about 5 days in the fridge
