Ingredients
- 2 large potatoes peeled and chopped (550g)
- 1 large carrot peeled and chopped ( 115g)
- 2 cloves garlic
- 3 tbsp taco sauce
- 3 tbsp nutritional yeast (I used bragg )
- 1 tsp chipotle seasoning
- 1/2 tsp onion powder
- Sea salt to taste
- Juice from 1/2 small lemon
Instructions
- Steam or boil until veg is tender, reserve water.
- Spoon the veggies into a blender.
- Using the water you boiled the veggies in, cover the potatoes and carrots halfway in the blender.
- Add in all the additional ingredients and purée until creamy.
- Add in a couple more splashes of water and scrape the sides of blender as needed . This keeps for about 5 days in the fridge
