Ingredients
- 10-12 c water
- 12 bok choy (whole)
- 1 large daikon (halved, sliced)
- 2 c bean sprouts
- 9 mushrooms (cut into small pieces)
- 1 block tofu (cubed)
- 3 Tbs bouillon (i like "better than bouillon vegetable")
- 3 Tbs miso
- 3 Tbs chili oil
Instructions
- Boil maybe 12 cups water
- Add like 3 spoonfuls each stock base (bouillon, miso, chili oil)
- Add mushrooms, daikon. cook awhile to reduce and get umami in broth
- Add bok choy, cook until almost done. i like to keep them whole
- Add tofu, cook a few minutes or not at all
- Add bean sprouts
