Ingredients
- 2 tsp olive oil
- 1½ c cooked farfalle (bow-tie pasta)
- ¼ c cubed roma tomatoes
- 1 Tbs diced red onions
- 2 shakes salt & cracked pepper ---
- 1 oz baby fresh spinach
- 1 oz fresca sauce ---
- Feta or parmesan FRESCA SAUCE:
- 1 Tbsp fresh garlic
- 1/16 tsp salt
- 1 Tbsp balsamic vinegar
- 1 Tbsp sweet white wine
- ¼ c olive oil
Instructions
- Cook farfalle
- Make fresca sauce (mix all ingredients together)
- In very hot pan saute olive oil, farfalle, tomatoes, onions, S&P
- Sear noodles, stirring occasionally until steaming hot
- Stir in spinach, fresca sauce
- Top with cheese & serve
