Zucchini Herb Casserole from Robyn

Ingredients

  • ⅓ c. uncooked rice
  • ⅔ c. water
  • 2 Tbs. Vegetable oil
  • 1 ½ lb. Zucchini (4-5 med size)
  • 1 c. green onion (1 bunch)
  • 1 ½ c. tomato (1 can diced)
  • 1 clove garlic
  • 1 ¼ tsp. Garlic salt
  • ½ tsp. Basil
  • ½ tsp. Paprika
  • ½ tsp. Oregano
  • 2 c. cheddar cheese (1 bag)

Instructions

  1. Cook rice.
  2. Cook garlic, zucchini and onions 5-10 minutes.
  3. Add seasonings.
  4. Mix in rice, tomato, and 1 c. cheese. Stir and cook until heated through.
  5. Transfer to greased 1 ½ qt. casserole dish. Top with remaining cheese.
  6. Bake uncovered at 350º for 20 minutes. Serve.
