Ingredients
- ⅓ c. uncooked rice
- ⅔ c. water
- 2 Tbs. Vegetable oil
- 1 ½ lb. Zucchini (4-5 med size)
- 1 c. green onion (1 bunch)
- 1 ½ c. tomato (1 can diced)
- 1 clove garlic
- 1 ¼ tsp. Garlic salt
- ½ tsp. Basil
- ½ tsp. Paprika
- ½ tsp. Oregano
- 2 c. cheddar cheese (1 bag)
Instructions
- Cook rice.
- Cook garlic, zucchini and onions 5-10 minutes.
- Add seasonings.
- Mix in rice, tomato, and 1 c. cheese. Stir and cook until heated through.
- Transfer to greased 1 ½ qt. casserole dish. Top with remaining cheese.
- Bake uncovered at 350º for 20 minutes. Serve.
