Ingredients
VEGGIES:- 1 can chickpeas
- 1-2 bunches carrots
- 1-2 bunches green onions, cut lengthwise
- 1 bunch asparagus, cut in half
- Brussel sprouts
- Olive oil
- Salt
- ½ c parmesan
TOFU:- 1 block Tofu
SAUCE:- 2 Tbsp balsamic
- 1 tsp honey
- ½ tsp Dijon mustard
- ½ tsp pepper
- Salt
GARNISH:- Fresh thyme
Instructions
- Make quinoa
- Wash and cut veggies
- Add veggies and chickpeas to baking sheet, cover in oil
- Bake at 400 for 30+ min
- Sprinkle parmesan on top, bake until melty (5-10 min)
- Cube tofu, press out water
- Bake in oil over medium until crispy
- Whisk sauce ingredients together
- Pour over cooked veggies
- Sprinkle thyme on top
