- VEGGIES:
- 1 can chickpeas
- 1-2 bunches carrots
- 1-2 bunches green onions, cut lengthwise
- 1 bunch asparagus, cut in half
- brussel sprouts
- olive oil
- salt
- ½ c parmesan
- 1 block Tofu
- 2 Tbsp balsamic
- 1 tsp honey
- ½ tsp Dijon mustard
- ½ tsp pepper
- salt
- fresh thyme

Instructions
- make quinoa ---
- wash and cut veggies
- add veggies and chickpeas to baking sheet, cover in oil
- bake at 400 for 30+ min
- sprinkle parmesan on top, bake until melty (5-10 min) ---
- cube tofu, press out water
- bake in oil over medium until crispy ---
- whisk sauce ingredients together
- pour over cooked veggies
- sprinkle thyme on top
