Ingredients
- Buffalo tofu from target
- Brown rice
- Pinto beans
- 1 c. shredded carrots
- 4 heaping cups kale
- 1 tbs avocado oil
- ΒΌ tsp. salt
- 1 clove garlic minced
Instructions
- Cook rice
- Shred carrots, chop kale
- Heat oil over med, add kale & carrots. cook 1-2 min
- Add garlic & salt. cook 1-2 min
- Cook tofu
- Assemble bowl: rice, tofu, carrot/kale, pinto beans
