Vegan Buddha Bowl

Ingredients

  • Quinoa
  • Fried tofu (glazed if desired)
  • Roasted squash & broccoli
  • Tomato, avocado, cilantro
  • Cheezy garlic sauce

Instructions

  1. Cook quinoa (2 c. water to 1 c. quinoa)
  2. Roast squash & broccoli
  3. Blend sauce
  4. Cook tofu
  5. Add quinoa, squash & broccoli, tofu, salad (tomato, cilantro, avocado), & sauce on top
